Claude, who most recently opened Brooklands at The Peninsula, will develop and oversee the menu, serving the food that Josephine used to cook him. There will be French bistro classics and regional Lyonnaise specialities, with a daily plat du jour and a set “Menu Des Canut” also on offer, named after the term ‘canut’ for Lyonnais silk and lace weavers.
The 76-cover space will be classic and timeless, reminiscent of the character of the iconic Lyonnaise restaurants, including a semi-private area at the back of the dining room behind a curtain. The design of Josephine is a testament to the creativity and vision of the talented team behind Fabled Studio, drawing inspiration from the warmth of Lyon’s historic Bouchons and the city’s rich cultural heritage.
