Robert Castro, former head chef at Tapas Brindisa, is to open his first restaurant next to Borough Market in June.
The 50-cover LOBOS Meat & Tapas Bar will serve fine cuts of Iberico pig, alongside a selection of tapas.
The location of the restaurant to Borough Market has certainly been important, and the team will work closely with the market traders to shape the menu around the produce available.
LOBOS translates as ‘wolves’ in Spanish, and this formed the central inspiration for the restaurant’s interior. Evoking a wolf’s cave, the cavernous space will be split over two levels beneath the rail arches of the market.
