Off the coast of Lindesnes, the restaurant has been designed by award-winning architects Snøhetta to offer the appearance of a rock formation rising from the sea.
Guests will descend 5m under water to a dining room offering more than 100 seats and floor-to-ceiling windows with views of the seabed and surrounding waters that include huge cod, colourful lip fishes, lobsters, seals and spiny dogfish – a type of shark.
Under’s head chef will be Nicolai Ellitsgaard Pedersen, formerly of the acclaimed gourmet restaurant “Måltid” in Kristiansand city centre, who promises a menu including local seafood, seabirds and wild lamb.
The restaurant will be within walking distance of sister property the Lindesnes Havhotell, and close to local sights such as the Sprangereid Canal and Lindesnes Lighthouse – the oldest in Norway.
