Guests can drink in-store, take home or bring bottles into Salon’s downstairs bar and restaurant situated directly next door, for a small corkage fee.
A specially curated menu of dishes will provide the perfect complement to the new wine list, from slow cooked rabbit ragu with house made pappardelle to Girolles, roast chestnut mushrooms, fresh coco beans, and Berkswell.
Salon have worked closely with their suppliers, Indigo, Les Caves de Pyrene and Under the Bonnet Wines to curate a vast collection of over 100 sparkling, red and white wines for the store, all with a focus on low intervention, small scale producers who farm their parcels with care and hand harvest their grapes.
The Salon team will be on hand, well versed to recommend bottles to suit every taste, and a handful of tables and chairs will be outside in the market, for guests to enjoy a glass or two. Looking ahead to the new year, Salon will also be inviting wine experts and producers to the store for talks, tastings and collaborations.
Finch Munro has helped with the design; the space mimicking that of the newly designed restaurant, with a warm marine blue colour scheme and exposed cellar lining the walls.
“We’ve always been really into our low intervention wines here at Salon, it goes hand in hand with our ethos for sustainable cooking,” explains founder, Nicholas. “The Wine Store is an opportunity for us to extend our offering, introducing some even more exciting wines to the list and hosting some fun collaborations.”
